Starting in Brussels, you'll cycle through the historic streets of Belgium's capital before exploring the rolling countryside of Pajottenland—the only region in the world where authentic lambic beer is produced through spontaneous fermentation. Visit legendary breweries including Cantillon, enjoy guided tastings of gueuze and lambic, ride scenic country roads, and experience the unique blend of Belgian cycling culture and world-famous brewing traditions. Day 1 — Thursday, November 5

🇧🇪 Welcome to Brussels

You’ve arrived! Settle into our hotel, shake off the travel dust, and meet your fellow adventurers.

As evening falls, we head out for a relaxed, insider-led pub wander through Brussels’ atmospheric streets. Expect cozy taverns, world-class Belgian beer, and plenty of laughs. It’s the perfect way to ease into the week — good pours, good company, and a taste of what’s to come.

Day 2 — Friday, November 6

🚴 Brussels Bicycle Beer Wander

After breakfast, we get fitted to our bikes — your trusty companions for the days ahead.

Today’s ride is a rolling love letter to Brussels beer culture, with stops at icons and innovators alike:

  • Cantillon – A living museum of lambic brewing and one of the most revered breweries in the world.

  • Brussels Beer Project – Bold, modern, boundary-pushing Belgian brewing.

  • Brasserie de la Senne – Balanced, characterful beers that define contemporary Brussels.

We’ll pedal between neighborhoods, soak in the city’s rhythm, and toast to a day well ridden.

Day 3 — Saturday, November 7

🍺 Lambic: Here We Come

Today we leave the city behind and ride into the heartland of lambic country.

This is where wild yeast rules, oak barrels breathe slowly, and time is the most important ingredient. We’ll visit extraordinary lambic breweries and a museum:

  • Visitor Centre ‘De Lambiek’

  • Two small, local classics

  • All deeply rooted in tradition

Expect pastoral roads, crisp countryside air, and beers that simply cannot be replicated anywhere else on earth.

This is the soul of Belgian brewing — rustic, rare, and unforgettable.

Day 4 — Sunday, November 8

🍺 The Classic Lambic Masters

Today is all about the legends.

We ride deep into lambic country to explore three very special approaches to brewing Lambic — each distinct, each rooted in tradition, each fiercely proud of doing things their own way.

You’ll experience:

  • The Timekeeper – Where patience reigns supreme and oak barrels quietly shape beer over years, not months.

  • The Blender – Masters of balance, artfully marrying young and old lambic into complex, sparkling gueuze.
